This wine is made from 100% home-grown grapes (organically grown, no chemical pesticides).
Originally, there were to be two wines, “Pino fan rouge 2023” (mostly Pinot Noir) and “FUKUIHARA rouge Z 2023” (mostly Muscat Baily A), but since 2023 was a very good year for red varieties, hot and dry, the two cuvées were combined.
In particular, we were able to harvest the Muscat Baily A at an unprecedented level of ripeness.
Of course, it is sugar-free and acid-free, but unusually for a Muscat Baily A, it has an alcohol
content of over 12%. The Pinot Noir and other red varietals were also harvested at high
ripeness, which gave the wines structure and the ability to age for a long time. The wine was
therefore designated “PRIVATE RESERVE” to signify that this was a “special vintage,” and was
released as a wine of a higher grade.
This wine was made by carefully selecting the harvested grapes, de-stemming them, then cold
macerating before pressing after about a month of fermentation. In this vintage, we also
experimented by adding 30% whole-cluster fermented cuvée. After pressing, fermentation
continued in François Frères barrels (80%) and Kádár (Hungarian oak) barrels (20%), followed
by natural malolactic fermentation and about one year of barrel aging.
