The aroma is of fruits such as mandarin oranges and quince, with the fragrant and sweet aroma
of brown honey and custard. The taste is thick and rounded on the attack. The soft and fine
bubbles bring out the freshness. You can feel the full body and savory aftertaste that are
characteristic of Petit Manseng. Serve well chilled.
Whale sashimi, Bamboo shoots boiled in Tosa sauce, Quiche Lorraine, Horse mackerel nare-
roe, Sea bream sauteed in basil sauce, Squid tempura, Green pepper and pork stir-fry, Picardi-
style ficelle, Pork belly stewed in star anise, Chevre cheese.
In the fall of 2023, the Petit Manseng grapes, which had fully ripened and had increased sugar
content at the Camino Vineyard, were transported to the Ashikaga winery and gently pressed by
bunch at low temperature. The juice was then debourbage (rake before fermentation) and kept
at 23°C or below for 10 days, then transferred to wooden barrels where it continued to ferment
with wild yeast for two months. When winter came, the yeast went into hibernation in the
wooden barrels for three months. In the spring of 2024, about one month after the yeast began
fermenting again, the sugar content was just right, and the wine was blended after racking and
bottled in a crown cap.
