A sparkling wine made from Delaware grapes sourced from Yamagata. It’s a dry, light-bodied wine with a pale gold color and 12% alcohol. The wine is produced using wild yeast and without any added sulfites or filtration. It’s known for its refreshing aroma of pineapple and sweet Watson pomelo, crisp bubbles, and balanced acidity with melon flavors. Grapes are crushed and pressed, then fermented in a resin tank. Bottled with added grape juice for a second fermentation in bottle. The wine is made using natural winemaking practices, including spontaneous fermentation and no racking to preserve lees flavors.
