Winemaking
Noumin Dry (“Farmer’s Dry”) is made from aromatic, high-acid white varieties grown by contract farmers in Hokkaido, Yamagata, and Nagano. The winery keeps the process simple: grapes are lightly pressed, the skins and seeds removed, and the juice fermented mainly in stainless steel tanks. After blending, the wine is aged briefly in tank, then filtered and bottled to preserve its clean, bright character — an approachable, affordable “Japanese wine with a light touch,” equally suited to sushi and washoku as to everyday drinking.
