Tasting notes

Made mainly from Pinot Noir grown in the cool climate of Yoichi, Hokkaido, this rosé combines the dry, layered complexity of a red wine with the light, elegant freshness of a white — a well-balanced, versatile dry rosé that suits a wide range of dishes.

Food pairing

Pairs well across a broad range of Japanese and Western dishes; well suited to grilled seafood, charcuterie, light poultry dishes, and vegetable-forward small plates.

Winemaking

The base wine comes primarily from Kimura Farm’s Pinot Noir in Yoichi, Hokkaido, fermented with wild yeast to preserve the grape’s aromatic, red-fruited character while keeping the wine dry and food-friendly. Vintage conditions in Hokkaido — including occasional heat and humidity uncommon for the region — are managed through careful, flexible winemaking to keep the rosé fresh, balanced, and complex.
