Winemaking
Tada Farm has grown wine grapes in Kamifurano, in the middle of Hokkaido’s Furano Basin, since third-generation farmer Shigeo Tada founded Tada Winery in 2016 (the family has farmed the land since 1901). Grapes are grown without herbicides or chemical fertilizers, hand-harvested berry by berry, and fermented with wild yeast — a method learned from Bruce Gutlove of 10R Winery in Iwamizawa, Tada’s mentor from the winery’s custom-crush years. Only a small amount of sulphites is added at bottling, and the wine is unfiltered.
