Winemaking
Müller-Thurgau, planted alongside Pinot Noir, Chardonnay, Merlot, and Bacchus at Tada Farm in Kamifurano, is fermented on its skins in the style of a red wine to draw out extra color, texture, and tannin. True to the “Sans Soufre” name, no sulphites are added at any stage, in keeping with Tada Winery’s wild-yeast, minimal-intervention approach learned from Bruce Gutlove of 10R Winery. The wine is bottled unfiltered.
