Tasting notes

A youthful, expressive nose of apple and apricot leads into a rich, fruit-driven palate balanced by crisp, lively acidity. Left to hang into late autumn — unusually late for Hokkaido — the grapes reached full ripeness, giving the wine real depth alongside its characteristic freshness. It shows differently to different tasters and has the structure to keep developing in bottle, with the acidity expected to soften and integrate further with time. A complete, well-balanced vintage with genuine aging potential.

Food pairing

A bright, food-friendly white that pairs well with fresh seafood and shellfish, dishes with citrus or herb accents, salads, and lighter, vegetable-forward fare. Its acidity and ripe fruit also make it a good match for goat cheese and other tangy, fresh cheeses.

Winemaking

This Sauvignon Blanc was grown on Hamada Vineyard’s hillside plots in Tappu, Mikasa City, and left on the vine into late autumn to reach full ripeness — a deliberate choice that is unusual for Hokkaido’s typically early harvest window. After destemming, half of the fruit underwent carbonic maceration and the other half a short skin-contact maceration before pressing; the two lots were then combined and fermented together in used oak barrels, followed by around eight months of barrel aging.
