The vibrant fruit, floral aromatics, and supple texture of Dad make it a welcoming companion for the dinner table. Notes of black cherry, violet, and spice pair beautifully with grilled meats, roasted mushrooms, yakitori, and hearty vegetable dishes, while its moderate body and fresh acidity allow it to complement a wide range of everyday meals without overpowering them. Like the wine’s namesake, it offers a comforting and dependable presence—equally suited to a celebratory gathering or a quiet meal shared with family.
Winemaking
The grapes are organically grown on our own vineyards. We select only the ripest grapes from each bunch. The harvested grapes are destemmed by hand and placed in tanks. Carbonic maceration in polyethylene tanks for 17 days. Then, all the grapes are collected in one stainless steel tank and carbonic maceration for 17 days. After pressing, the wine is fermented and aged in stainless steel tanks for 114 days without racking, and then bottled.
