Tasting notes
Hi Ha Mata Noboru is Coco Farm’s flagship red built around Tannat, a tannic, deeply colored variety from southwest France that the winery was the first to plant in Japan. Blended with small amounts of Cabernet Sauvignon and Pinot Noir, the wine balances Tannat’s firm structure and dark fruit with a softer, more approachable mid-palate. Expect concentrated black and red fruit, moderate spice, and a long, structured finish that rewards a few years of bottle age.
Food pairing
Grilled or roasted red meats, wagyu yakiniku, lamb with herbs, aged hard cheeses, and other richly flavored, protein-forward dishes that can stand up to the wine’s tannin and structure.
Winemaking
Tannat was first planted at Coco Farm’s own steep Ashikaga hillside vineyard, since the winery believed the variety — suited to the high rainfall of France’s Madiran region — could also thrive in Japan. Cultivation was later extended to trusted contract growers in Kaminoyama, Yamagata, and Takayama-mura, Nagano, while the Cabernet Sauvignon and Pinot Noir used in the blend are grown by contract farmers in Yoichi, Hokkaido. Grapes are fermented with wild yeast using simple, minimal-intervention techniques that let the character of each variety and vineyard show through, producing a wine the winery describes as powerful yet gentle.
