Tasting notes
The companion white to Kaze no Rouge, Kaze no Etude (“Wind’s Etude”) blends Chardonnay with a portion of aromatic Petit Manseng. Wild-yeast fermentation gives a flavorful, slightly off-dry white with good texture and a gentle roundness, balanced by fresh acidity.
Food pairing
Sushi, tempura, and washoku (Japanese home cooking) generally — the wine’s gentle sweetness and acidity make it a flexible match at the table.
Winemaking
Grown by trusted contract farmers and fermented with wild yeast at Coco Farm’s hillside winery in Ashikaga, this Chardonnay/Petit Manseng blend has been served in international first class alongside its red counterpart, Kaze no Rouge, and its name reflects the mountain winery where “the wind blows through.”
