Winemaking
The base wine comes primarily from Kimura Farm’s Pinot Noir in Yoichi, Hokkaido, fermented with wild yeast to preserve the grape’s aromatic, red-fruited character while keeping the wine dry and food-friendly. Vintage conditions in Hokkaido — including occasional heat and humidity uncommon for the region — are managed through careful, flexible winemaking to keep the rosé fresh, balanced, and complex.
