Tasting notes

Muscat, pear, white peach compote, vegetal herbal aroma. Slightly sweet, with a good balance of acidity and bitter tannins. The aftertaste is very long, with a long-lasting, nectar-like thick fruitiness. The aromatic aroma has a rounded taste and the alcohol gives it a Daiginjo-like atmosphere. It is a light wine with many elements.

Food pairing

Shine Muscat wine pairs well with a variety of foods, including shellfish, various types of cheese (especially a creamy camembert or burrata cheese), tropical fruit (including poached pears), Greek yogurt with honey and nuts, prosciutto and melon.

Winemaking

 

With the 2022 vintage, we started making wine from Shine Muscat in earnest. While taking advantage of its characteristic aroma, we were looking for a way to control the volatile acidity to compensate for the weak acidity and light body, and to bring out the best of Shine Muscat. With 2023 vintage, we balance the overall flavor by assembling Riesling, Chenin Blanc, and Sauvignon Blanc. Aging in old barrels for 8 months showed a new expression.
