Winemaking
The Kyoho grapes, a table-grape variety for which Tomi City is well known, are fermented with wild yeast; a small portion of gently pressed estate red-wine lots (Pinot Noir, Merlot, Cabernet Franc) is blended in for added structure and interest. As with all Domaine Nakajima wines, no sulphites are added and the wine is bottled unfined and unfiltered.
