Tasting notes
The 2023 vintage has notes of red cranberries, cherries, and saline minerality on the nose, with a mellow structure and good acidity on the palate, leaning towards the lean side with a sweet and sour finish.

It’s a great match for rich, flavorful dishes like grilled or roasted meats (pork, beef, lamb), as well as Mediterranean cuisine with tomatoes, peppers, and olives. It also complements vegetarian dishes, especially those with herbs and vegetables like asparagus, peas, and broad beans
Winemaking
Hand-destemmed and fermented with native yeasts. It undergoes a 2.5-week fermentation in a resin tank filled with CO2, followed by pressing in a hydraulic basket press. The wine is then aged for 10 months in used 225-liter oak barrels, with minimal sulfites added before bottling. It is unfined and unfiltered.
