Tasting notes
The scent is large, with sweet and refreshing scents of passion fruit, acerola, shikwasa, and kabosu. It has a slightly sweet taste and is characterized by strong acidity. In the aftertaste, the fruit flavor and umami slowly continue along with the acidity. By utilizing the power of microorganisms to produce volatile acids, we compensate for the weak acids inherent in table grapes. You can also feel the gorgeousness of ethyl acetate in the scent.
Winemaking
It is one step more advanced than “2021 Aki Queen Macéré.” When I drank this wine, my idea that “you can’t make good wine because it’s raw grapes” changed. As we continue to face each other every year, new ideas are born, and wines with individuality have been created through free brewing. Through export, Aki Queen has become recognized overseas. It has been very well received, especially in Europe and America, and we have high hopes that it will become the new face of domaine tetta.
