Tasting notes

A cloudy appearance due to fine lees. A refreshing scent reminiscent of sweet and gorgeous scents such as yellow apple, white peach, and pear, and citrus fruits such as kabosu and sudachi. It has a dry taste, with a backbone of acid and bitterness derived from the fruit skin, and the fine foam gives it a smooth and refreshing feel. Fresh and dry, citrus, green apple, savory aroma of yeast, fresh acidity and gentle carbonation, the impression of drinking craft beer. This is a wine that has a light aroma and taste, and you will finish the bottle in no time.

Winemaking

We have brought back Chardonnay Perlant for the first time in two years. Although it was a popular product, there was a lot of room for improvement in terms of taste, and we continued to think about how we could improve it. For 23VT, we changed the structure to use the pericarp to make the skeleton larger and create more complexity. It has a light taste and approachability that doesn’t make you feel that it contains 12% alcohol. The fruit flavor that lingers on the aftertaste was beautifully expressed.

After pressing with a balloon press, fermentation proceeded in stainless steel tanks without temperature control, and at the final stage of fermentation the wine was bottled without added sulphites to give a slightly fizzy type. The wine was not oaked, allowing the freshness and fruity character of Japanese Chardonnay to be felt directly.
