Tasting notes

Floral and aromatic nose reminiscent of Muscat, pear, yellow peach and white blossom. Dry, with a great structured of acidity and tannins on the palate. The gorgeous aroma spreads in the mouth and lingers on the palate along with the fruity flavors. The unique character of bitterness from the wine is reminiscent of craft beer. 10 varieties of white grapes were used to make this such a unique style of wine.

Food pairing

Pairs well with a variety of dishes, including seafood such as grilled shrimp or scallops, as well as light poultry dishes like roasted chicken with herbs. Its crisp acidity and hints of citrus make it a versatile companion to fresh salads and creamy cheeses as well.

Winemaking

After destemming, only the berries were placed in open-top stainless-steel tanks for 14 days of maceration with punching down three times a day. During this time, the temperature was not controlled. After careful basket pressing, the wine was aged in stainless steel tanks and barrels for a total of 10 months before bottling. Just before bottling, 15 ppm sulfites were added.

One of Tetta’s unique characteristics is that it grows a wide range of grape varieties on a trial basis. There are more than 30 varieties of wine grapes alone, and those varieties which yields are too low to be released singly are gathered and mixed in a single tank. In Japan, there are no strict winemaking laws yet, which allows us to create wines from unusual combinations of grape varieties with a free spirit. We believe that the grapes help each other as friends in the vat, and that the wines have their own personality.
