Tasting notes

The top of the scent has thick fruitiness with aromas of ripe strawberries, blackcurrants,acerola, cherries, violets and cotton candy. The characteristics of white varieties are also present in the base, with grapefruit, quince, white peach and firm mineral nuances. A little tannin can be felt in the aftertaste.

Food pairing

Pairs well with beef, veal, pork, roasted turkey or chicken, game, mushrooms, pasta, and fish courses. Excellent for a traditional Thanksgiving meal.

Winemaking

Multiple vintages of grapes are used for the Fukuihara Clairet. Negoce grapes from organic farmers in Fukuihara provide the following:

  • Chardonnay: Cuvee aged in oxygen-permeable plastic tanks from the 2023 vintage, cuvee aged in stainless steel barrels from the 2022 vintage after drying in the shade, and cuvee aged in stainless steel barrels from the 2022 vintage after maceration (including Pinot Gris).
  • Muscat Bailey A, Zweigelt: Cuvée aged in barrels for 8 months (2023 vintage).
  • Pinot Noir: 2023 cuvée fermented and aged in oxygen-permeable plastic tank
